Applesauce de Luxe

This is a neat little recipe I found in my mom's recipe cards, and I swear she hardly ever made it, but once I discovered it, I made it myself quite a bit. It's a real case of synergy: the sum being greater than the parts. In my opinion, this is much better than plain applesauce, and much better than plain jello -- but that's all it is.
one small (3 oz) package of red Jello
(raspberry or cherry works best)
1 cup boiling water
1 1/2 cups applesauce
1 tsp lemon juice (for tartness)
Prepare Jello as usual (follow the directions on the package) substituting in the applesauce and lemon juice for the cold water. Chill and serve. (I like to pour it into individual cups before serving -- it looks nice that way.)
