Yummy Yummy TabouliThis is not the most tradtional tabouli (tomato juice, extra veggies, no parsley) but I really like it. It's actually off the back of the bulghur wheat bag, but I liked it so much that I copied it down and put it in my recipe file. With some modifications...I'm not sure all these vegetables were in the original recipe, but they taste great. I often skip the sesame seeds if they're a pain, since I'm not sure their flavor really comes through all that strongly. I encourage you to add whatever you feel is missing (like parsley or extra garlic, if you're fond of those).
All of those vegetables listed should be finely chopped (I just didn't feel like repeating it all those times in the list). I also just estimate the amounts for the most part. Just remember this: half a cup of any of those vegetables is not going to be a lot. Certainly not the whole pepper or cucumber. Anyhow just mix all these things in a big bowl and let them sit in the refrigerator until the bulghur is tender and most of the liquid is absorbed. Give it a final mix before serving. Another hint:when replacing it in the fridge after serving some, scrape down the sides of the bowl and flatten the surface of the remaining tabouli. This prevents the dual problems of strange unsavory looking puddles of liquid forming in the low parts and bits drying out in the high parts. |
